Kit,
One thing that works for me is too spray the plant with some fungicide, and
put it in a zip-loc bag with some slightly damp sphagnum in it, and put the
plant, bare root, within the sphagnum. Then I set the bag in the fridge.
This seems to satisfy the dormancy requirements, but most importantly
satisfies the spouse requirements :)
