This sounds like a fun project, as long as you get several people involved.
For one person it might just be a lot of work! I think you will make your
job a whole lot easier if you remember that you just need an environment
that your plants can survive in for two weeks, for the duration of the
fair, instead of a really nice arrangement in which they'd grow well
over a long time. Unfortunately, if security or nighttime temperatures
may be a problem, the easiest thing to do might be to put all the plants
in a big flat and take them home every night.

Whenever I make a new terrarium arrangement, I always let it run for a few
days without plants, during which I determine the temperature extremes
during the night and day.
