Hi Matt

If I understand well your description, I'll say, following my own experience,
that you are overwatering your plant. You should try more hygrometry, less
watering. End of the young leaves turning to brown is often a symptom of
overwatering for all the plants. Turning to yellow could be a sign of
alkalinity. But, in this case, the plant dies by the roots, so the heart of
the rosette dies in first, letting the leaves green (more yellow than green)
around the rot growing point. Everyone who has noticed something else should
correct me or add his two cents immediately.
