Dear Peter, Doug, et al.,

        Perhaps other wineries do it differently, but our local winery uses
untreated oak barrels. The barrels are sold afterwards to gardeners. These
barrels are extremely popular for their size and general convenience. No
one seems to have complained about any residual chemicals. Of course,
elsewhere it may be different, so you should ask before purchasing the
barrel.
