This is a good question. My suspicion is that the answer in part lies in
the definition of "dormancy". In my experience, Sarracenia and Dionaea
will gradually weaken and die over the years if not allowed a "resting"
period.

I suspect if your plants are still doing well and flowering that you are
achieving an adequate dormancy period without going to the extremes of
putting your plants in the fridge. If your plants are recieving some
degree of sunlight then perhaps the naturally decreased photoperiod
and/or colder indoor temperatures in your house during the winter are
adequate to allow for this resting period.

I have grown Sarracenia for many years in fishtanks on north and west
facing windowsills with supplemental flourescent light and I suspect they
did fine for the above reasons. I have tried to force actively growing
plants into dormancy grown entirely under artificial light by putting
them in the fridge and have found this an effective way of killing
plants. Your mileage may vary.
